| Note | Vignola Cheery PGI is characterised by a crunch and consistent pulp, with the only exception of Mora di Vignola, and with a light red or dark red peel, except for Durone della Marca variety, that is light yellow and red. (2) The cherries are appreciated not only for their flavour but also for their beneficial properties: they produce a diuretic action, they are astringent and they contain precious mineral salts (like potassium, calcium and iron) and vitamins of the A and C groups. The zone of culture takes place between the municipalities of Modena and Bologna and it includes, apart from Vignola, 28 territories of the foothill areas. The fruits of the cherry tree reach maturation in spring, the collection lasts from late May to all June. (3) It must be preservated in the fridge or in a dry and cool place. It is the ideal fruit to conclude a with and it is a perfect ingredient for many recipes, sweet and salty: the so-called “ciliegiata”, a sweet cooked in wine and in sugar; the confitures; the classic sweet “clafoutis”; sauces to flavour meats; liquors, like Kirsch or cherry. It is also perfect for the preparation of candied or in brandy fruit. (4) Vignola celebrates its cherries during two important festivals: in April, there is “festa dei Ciliegi in Fiore” (“Cherry Blossom Festival”), with a parade of allegoric floats and at the beginning of June we have “Vignola: è tempo di ciliegie”, a cultural and gastronomic manifestation with an open-air market of the cherries and gastronomic stands with plates cooked with cherries (“risotto” with jams, ice-creams, liquors).
