DefinitionCured meat obtained from the manufacturing of fresh and selected pig meat and produced in
the Padana Plain, in particular in the zone of Cremona, but also in other areas belonging to the
regions Lombardia, Emilia-Romagna, Veneto and Piemonte. (1)
NotePGI protection for “Salame Cremona” is reserved to the cured meat product obtained from pig
meat coming from the musculature belonging to the carcass and straited and fat muscle fractions. (2)
After the salting and the drying phases, the product needs to age: the aging varies within a minimum
period of 5 weeks for the salami of small dimensions and a period of 4 months for the salami of big
dimensions. Salame Cremona PGI has a cylindric shape; when cut, the slice must be compact and with
a tender consistence. The colour of the pate is red with an irregular and white-coloured lard grading.
The flavour of Cremona Salami is aromatic and spicy, intense and strong, never sour. (3)
It can be consummated as a snack or as second course, cut into small cubes for the aperitifs.
The salami served with figs and pears represents an alternative but savoury recipe. (4)
