(2) After the salting and the drying phases, the product needs to age: the aging varies within a minimum period of 5 weeks for the salami of small dimensions and a period of 4 months for the salami of big dimensions. Salame Cremona PGI has a cylindric shape; when cut, the slice must be compact and with a tender consistence. The colour of the pate is red with an irregular and white-coloured lard grading. The flavour of Cremona Salami is aromatic and spicy, intense and strong, never sour. (3) It can be consummated as a snack or as second course, cut into small cubes for the aperitifs.
