| Note | PGI Romagna Shallot is often confused with garlic or onion but the shallot has a pyriform bulb, with a leather and purple-coloured with white shades skin. The product is covered by an external cling film characterised by different colours, from copper to red. Its flavour is sweeter than the garlic one, but it is more perfumed than the onion one. Romagna shallot is different from the other varieties of shallot cultivated in other zones thanks to its organoleptic characteristics, that are the parfum, the flavour, the colour and the aroma. (2) Emilia-Romagna is the cradle of this product culture, in particular in the areas of Bologna, Ravenna and Forlì-Cesena. Thanks to its versatility, it is used in a high number of recipes. It conveys its ductility in condiments in general, giving the plates aromaticity and tenderness of high level. It is used in the preparation of soups, ragù, fillings and in order to give flavour to meat and roasts. Its leaves, collected when they are green and finely cut, can be used to enrich mixed salads.
