Sour cherry belongs to populations of biotypes identifiable with the groups of sour cherries, as well as of cherries, sour cherries and their crossings. (2) The Protected Geographical Indication Amarene Brusche di Modena is reserved exclusively for the best fruits, which must have some precise characteristics, such as soft texture, brown, red color with dark reflections and a perfect balance of flavor, between sweet and sour. The jam must have a minimum fresh fruit content of 150% at 2,5-3,5 pH. (3) The product has a distinctive sour taste, which clearly distinguishes it from other jams. Amarene Brusche di Modena IGP jam is ideal for the preparation of cakes and tarts based on short pastry. It can also be enjoyed naturally, as a dessert at the end of a meal, and is very appreciated in combination with ice cream. The black cherry tart, with a base of short pastry and coverage of black cherry jam, is a typical dessert of the Modena tradition. (4) |
