The animals at this age are young and their meat stays really thin with a composition in fat acids healthy
for the modern nutrition. Appennino Centrale represents the indication of origin, because it is the zone where,
traditionally, Chianina, Marchigiana and Romagnola are raised since 1500 years, feeded with fodder and
feedstuff typical of the area. (2)
Vitellone Bianco Appenino Centrale PGI is well-known thanks to its really savoury and flavoury meat
characterised by a visible red colour, fine grain, elastic and solid consistence and some fat pieces on the
musculature. One of the main features of this meat is the low percentage of fats, the high quantity of iron
and the great level of vitamins in it. (3)
This meat is great if tasted grilled, cooked in the pan, barbecued, boiled and as a stew. (4)
ContextThe origins of Vitellone Bianco dell’Appennino Centrale can be traced back to the pre-Roman times when 
the Etruscans raised cows with the same common characteristics of the Podolica cattle breeds which
are reared in the Apennines today. (5)
