DefinitionCotechino Modena or Cotechino di Modena is a fresh sausage made from a mixture of pork, fatback, and pork rind, flavoured, placed in a casing and to be consumed boiled. (1)
NoteCotechino Modena is a product with a PGI (Protected Geographical Indication). It consists of noble parts of pig and rind, as prescribed by tradition. The meat is minced and delicately flavoured with spices and herbs (cloves, pepper, nutmeg, cinnamon and wine) and then stuffed into casings. (2)
Its consumption extends throughout Italy during the Christmas holidays. (3)  
ContextBecause of the pork rind, it is considered a “poor” food, but it has nevertheless won a place of honour at the table on Christmas and New Year’s Eve. Cotechino di Modena has earned PGI recognition. (4)
