| Note | PGI Po Delta Rice names only the fruit of the rice belonging to “Japonica”, Superfino group in the varieties Carnaroli, Volano, Baldo and Arborio. This rice is principally produced in the areas of Rovigo and Ferrara. It presents a big, crystal clear and solid grain and it can be white or whole. It has a high level of absorption, little decline of starch and a good resistance during the cooking. The caryopsis just gathered are called “risone”, rough rice or “riso vestito”. (2) The characteristics of the terrains, the temperate climate and the proximity to the sea are the principal factors that influence and characterise the production in this area of Po Delta Rice. In fact, the climate permits to maintain the plant drier and healthier, it favours the constant growing of the rice and the slow maturation of the rice grains, so more resistant to illnesses. Thanks to the sediments of the river, the terrains of Po Delta are very prolific because they are rich in minerals, in particular potassium, so much that the addition of potassium fertilisers is useless.
