NoteFossa Sogliano Cheese PDO must come from sheep, cow or high-quality mixed milk, belonging to
livestocks of hilly and mountainous territories of Marche and Romagna. The shapes of the cheese
are put into ancient pits, flask-shaped, carved into the rock to a depth of 3 metres. (2)
Around mid-August,they disinfect the pits with fire and wallpaper them with straw, they put there the
cheese, closed into jute bags and the pit is finally closed with sand and wooden boards. (3)
After 80-100 days of aging, the cheese is taken away from the pit, traditionally on the 25th November, the
day of Saint Catherine. It is used in the Emilia-Romagna and Marche cuisine as ingredient for the
preparation of many recipes like the traditional “Fossa Sogliano Cheese PDO erbazzone”. (4)
ContextIn Italy Fossa Cheese is used to accompany various dishes, especially pasta and first courses. It goes well
with red wines intense and fine or sweet passito or with marsala. (5)
