| Note | PDO Salame Piacentino is a cured pig meat. They add salt and spices varying locally to the lard and the meat. The colour of the slice is red with little white-rose lards. The aroma is fragrant, very influenced by the period of maturation, while the flavour is fine and sweet. (2) This salame is perfect as starter, combined with the traditional “gnocco fritto” or with cool figs. Moreover, it can be used as ingredient for the preparation of savoury recipes of the local tradition. It is often combined with PDO wines of Piacenza hills. (3) |

Others (a minority) think that the name would come from Salamis, a Cypriot town that was destroyed by an earth wake in 450.
