| Note | The Product Specification of Felino claims that the sausage is prepared with meat of pigs belonging to certain breeds and that cuts such as bench mince (chuck back rib) and bacon head should be used. Meat from boars and sows is not allowed.Processing begins with mincing, followed by flavouring. Salt, white wine with a finely chopped garlic and pepper and other spices are added. The filling takes place in the natural casing and is then followed by the binding with twine; the maturation must last two months, at least. (2) In 2013, Felino Salami was recognised by the European Union as an agri-food product with a protected geographical indication (PGI).
