DefinitionCured meat in intestines and aged, it is produced from a blend of mince of pig fat and meat with
many salt and pepper granules. The name comes from the operation of salting, compulsory for
the right conservation of the product. (1)
NotePDO Salame Piacentino is a cured pig meat. They add salt and spices varying locally to the lard
and the meat. The colour of the slice is red with little white-rose lards. The aroma is fragrant,
very influenced by the period of maturation, while the flavour is fine and sweet. (2)
This salame is perfect as starter, combined with the traditional “gnocco fritto” or with cool figs.
Moreover, it can be used as ingredient for the preparation of savoury recipes of the local tradition.
It is often combined with PDO wines of Piacenza hills. (3)
ContextDOP Salame Piacentino belongs to the group of salted and naturally cured products, with a
casing made from the rectum of the pig, to be consumed uncooked. (4)

EtymologySome think that the term “salame” comes from the medieval latin term “salumen”, that is a mix of
salty things. Others (a minority) think that the name would come from Salamis, a Cypriot town
that was destroyed by an earth wake in 450. The salame is followed by the adjective Piacentino
because it is produced in the zone of Piacenza. (5)
