NoteItalian Salamini cacciatora PDO (Protected Designation of Origin) are an excellent product to eat
either as an appetiser or for a quick snack or aperitif with friends. The name of these small
salamis, originally produced in the hills of Lombardy and then spread to the rest of Italy, derives
from the custom of hunters to carry them in their saddlebags, both because they are easy to
transport and because of the practicality of the single portion. (2)
A charcuterie product with a cylindrical shape, obtained from lean and fat pork meat from striated
muscles, salt, pepper in pieces or ground and garlic, about 20 cm long, with a non-elastic consistency,
a compact and homogeneous slice, ruby red in colour with well-distributed fat grains. The flavour is
mild and delicate, never acidic, and the aroma is also delicate and characteristic. Mechanically separated
meat may not be used. (3)
ContextItalian Salami Cacciatore PDO are raw, cured and stuffed charcuterie products obtained from
lean pork and pork fat of pigs belonging to the Italian Large White, Landrace and Duroc breeds or
other similar breeds compatible with the Italian heavy pig. (4)

EtymologyIts name comes from “cacciatori”: they were those salami that the hunter brought with him,
combined with bread, during the hunting trip, because it was a product rich in fat and noble
